Butternut Squash Soup

Butternut squash soup is a perfect winter recipe because it’s both comforting and healthy. Butternut squash is a good source of fibre, vitamin C, and potassium, all of which are important for maintaining a healthy immune system. To make this soup, you’ll need butternut squash, onions, garlic, vegetable broth, and seasonings. Simply roast the squash and onions in the oven, blend them together with the broth and seasonings, and heat it up on the stove for a warm and nutritious meal.

Lentil Stew

Lentil stew is a hearty and filling winter recipe that is loaded with protein, fibre, and essential vitamins and minerals. Lentils are a great source of plant-based protein and are rich in iron, which is important for maintaining healthy blood cells. To make this stew, you’ll need lentils, vegetables such as carrots and celery, tomatoes, vegetable broth, and seasonings. Sarson ka Saag: This is a classic Indian dish made with mustard greens, spinach, and other winter greens. High in fibre and vitamins, this dish is usually served with makki ki roti. Remember to add spices as per your preference in order to make it less bitter.

Haldi Doodh: Haldi doodh, or turmeric milk, is a traditional Indian drink that is known for its healing properties. It is made with milk, turmeric, honey, and other spices, and is consumed as a natural remedy for colds, coughs, and other winter ailments. It is also a great way to stay warm and cosy during the winter months. If you don’t consume dairy, you can even have this with milk alternatives such as almond milk or oat milk. 

Quinoa Chili

This quinoa chili is a healthy vegetarian alternative that still packs in plenty of flavour. Start by cooking the quinoa. In a separate pot, sauté onions and garlic in olive oil. Add diced bell peppers, tomatoes, beans, chili powder, cumin, and paprika. Simmer for 10-15 minutes, then stir in the cooked quinoa. Serve with a dollop of plain Greek yoghurt if you want to make it creamier.

Baked Apples

For a healthy dessert option that still feels indulgent, try baked apples. Start by coring and slicing two apples, then place them in a baking dish. Mix together a teaspoon of cinnamon, a teaspoon of honey, and a tablespoon of melted coconut oil. Drizzle the mixture over the apples and toss to coat. Bake at 350°F for 20-25 minutes, or until the apples are tender and golden brown. Serve with yoghurt or a sprinkle of chopped nuts.
